A delicious version of a snickerdoodle, using strictly butter and a sweet kiss of vanilla! This Vanilla Doodle cookie recipe has a tasty soft and chewy texture with the perfect combination of sugar and spice. Add to your holiday cookie assortment or enjoy for any occasion.
Ingredients
- 2 sticks softened/room temp unsalted butter
- 1 3/4 cups sugar, plus more if needed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons ground cinnamon, plus more if needed

“I have a rule in my house, no shortening! These snickerdoodles differ from most recipes because they use strictly butter and have a kiss of vanilla! They always seem to be the first to go on my family’s holiday cookie plate.”
Directions:
Cream your butter and 1 1/2 cups of sugar until well mixed. Add eggs and vanilla. Next, slowly incorporate your dry ingredients until mixed. In a small bowl, mix remaining ¼ cup sugar and cinnamon. Take a cookie scoop, make balls and roll in cinnamon sugar mixture. Place 2” apart on a baking sheet and bake for approximately 10 minutes in a 400°F oven. Let cool on a rack and enjoy! Makes approximately 36 cookies.
