Vanilla Confetti Bundt® Mug Cake

Make one or many vanilla confetti Bundt® mug cakes using your favorite Micro Mini Bundt® designs. A sweet single serving mug cake idea for kids or a quick treat for movie night.
Ingredients
- 1/4 cup all-purpose flour
- 2 Tbsp granulated sugar
- 1/4 tsp baking powder
- 1/4 cup whole or 2% milk
- 2 Tbsp butter, melted
- 1/4 tsp vanilla extract
- 1 tsp sprinkles (blue or multicolored)
Directions
Prepare Mini Micro Bundt with baking spray or butter. In a small bowl, stir together all ingredients except sprinkles until smooth. Gently fold in sprinkles. Pour into Micro Bundt and spread evenly. Place in middle of microwave and heat on high for 50 – 60 seconds. Let cool 2 minutes, then turn onto a plate. Serve warm. Makes 1 Micro Bundt cake.

Pretty good as a base. I’d probably add 1 egg and a bit of salt, cut back on the sugar by half, and try vanilla bean paste instead of extract. I also omitted the sprinkles.

Quick and easy, fun little cake. Quality ingredients (whole milk, butter, real vanilla) will make the cake taste wonderful. Do NOT overcook – the cake will continue cooking while it is cooling. Different microwaves will need different times. (Mine is 1000W and 60 seconds cooking + 1 minute waiting was perfect). The texture of the cake is moister than a traditionally baked cake. But this is so much faster!

I made a batch of 4 cakes without sprinkles. The taste is okay (kinda bland- maybe sprinkles adds to flavor). I added cinnamon sugar to 2 of them which made it taste more flavorful. I will say though that they weren’t done after 60 seconds (still a little doughy on the bottom which kept them from coming out of the pan).
