Toffee Banana Bunny Bites

Add these adorable homemade toffee banana bunny bites to your Easter baskets or enjoy these bite-sized cakes at your next spring gathering.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp kosher salt
- 1/3 cup milk
- 1 tsp vanilla extract
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 2 Tbsp brown sugar
- 1 egg, at room temperature, slightly beaten
- 2 ripe bananas, mashed
- 1/3 cup toffee bits, finely ground (Heath Bits O’ Brickle)
Directions
Preheat oven to 350°F. Prepare Bunny Bites pan with baking spray containing flour and use a pastry brush to evenly coat the details of the pan. In a medium bowl, whisk together flour, baking powder and salt. In a measuring cup, combine milk and vanilla extract. Set both aside.
In the bowl of a stand mixer, using the paddle attachment, beat butter at medium-low speed until creamy. Add sugars and beat on medium speed until light and fluffy. Add egg and mix until incorporated. In a small bowl, add toffee to mashed bananas and stir. Add to egg mixture. Add the flour mixture, alternating with the milk mixture and blend well, scraping down sides of bowl as necessary. Fill each design with batter 3⁄4 full. Gently tap pan on towel-covered countertop to remove any air bubbles; smooth as necessary with a small spatula. Allow batter to rest in pan for 10 minutes.
Bake for 12 to 14 minutes or until edges are lightly browned and center of cakes is firm to touch. Cool Toffee Banana Bunny Bites in pan on cooling rack for 5 minutes, then invert onto a cooling rack. Clean pan, prepare with baking spray and repeat steps with remaining batter. Yields about 24-28 Bites.
