Spiced Autumn Pancakes

A must-try pancake recipe the kids will love! These Spiced Autumn Pancakes make seven cute fall designs using our Autumn Pancake Pan. Sprinkle fresh cinnamon or baked apples along with warmed maple syrup for a delicious fall brunch.
Ingredients
- 1 cup flour
- 1/2 teaspoon baking soda
- 1 teaspoon sugar
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1 egg
- 1 cup buttermilk
- 1 tablespoon butter
- Optional toppings: fruit, nuts, syrup, whipped cream
Directions
Preheat pan over medium heat and season with butter or oil. In a medium bowl, sift together flour, baking soda, sugar, baking powder, spices and salt; set aside. Beat egg until light and fluffy. Add egg, buttermilk and butter to dry mixture; mix until blended. Spoon batter into cavities, leaving one empty. Cook until pancakes bubble and are starting to brown on edges. Turn each pancake over into empty well and continue cooking. Top with your favorite toppings such as apples, bananas, nuts, whipped cream, butter, syrup, etc.

Huge hit with visiting Thanksgiving guests. I don’t have any Nordicware, but were very tasty using an electric griddle. The only changes I made was to add an extra tablespoon of sugar and an additional cup of buttermilk to thin out the batter. Made it the night before for quick prep the next morning. Will definitely be making again! Enjoy!
