Rosemary Maple Roasted Nuts

With a combination of sweet and spice with a fresh citrus tone and rosemary herb finish, these roasted mixed nuts are absolutely delicious, easy to make, and will make you reach for seconds. Place in small mason jars with ribbon for an adorable gift idea or save for a sweet and savory snack.
Ingredients
- 1/4 cup fresh rosemary, finely chopped
- Finely grated zest of 1 lemon
- 1/4 tsp cayenne
- 1/4 tsp cumin
- 2 tsp fine sea salt
- 1/4 cup maple syrup
- 2 Tbsp olive oil
- 1 cup raw cashews
- 1 cup raw almonds
- 1 cup raw pecans
- 1 cup raw walnuts
Directions
Preheat oven to 350°F. Line a sheet pan with parchment paper and set aside. Mix rosemary, lemon zest, cayenne, cumin, salt, maple syrup, olive oil in a bowl. Add nuts to mixture and coat evenly. Spread evenly on the sheet pan and roast for 20 minutes. While cooling, toss nuts in the pan to prevent mixture from sticking and break apart into individual pieces if necessary once fully cooled.

I tried this recipe a couple of years ago for a holiday snack and was asked for the recipe several times over. Gifting a small jar to family and friends has now become an annual tradition! I vary the recipe slightly by using a big bag of mixed nuts instead of buying the varieties listed in the recipe separately-seems a bit more economical.
