- Crust:
- 2 cups butter
- 4 cups flour
- 1 1/ 2 cups powdered sugar
- 2 teaspoons ground cinnamon
- Filling:
- 1 cup peach preserves
- 4-5 large peaches
- 2 tablespoons lemon juice
- 1-2 tablespoons flour
- 1/ 2 cup honey nut granola for topping
Preheat oven to 350°F. Blend butter, flour, sugar and cinnamon. Press crust into High-sided Sheet Pan. Bake for 15 minutes and let cool. Spread preserves onto crust, reserving 2 Tbsp for glazing. Slice peaches and arrange on crust. Sprinkle with lemon juice. Bake for 20 minutes. Remove tart from oven. Peaches vary in juiciness,so if the tart looks too moist, sprinkle with 1-2 tablespoons flour. Brush with reserved 2 tablespoons of preserves, sprinkle with granola and return to oven for 20 additional minutes. Tart can be served warm or cold.
