You will love these simple bite-sized banana chocolate chip muffins for a quick breakfast and tasty snack option. Bake ahead of time and have ready for the busy week!
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp table salt
- 1/4 tsp cinnamon
- 1 egg
- 3/4 cup milk
- 1/4 cup unsalted butter, melted and cooled
- 1 tsp vanilla extract
- 2 medium ripe bananas, mashed
- 3/4 cup mini semi-sweet chocolate chips
- Optional Topping: oats and more chocolate chips, if desired
Directions
Preheat oven to 350°F. Prepare Petite Muffin Pan with baking spray containing flour. In a medium bowl, whisk flour, rolled oats, brown sugar, baking powder, baking soda, salt and cinnamon. In a second bowl, combine egg, milk, melted butter and vanilla. Combine wet and dry ingredients and stir until just moistened. Fold in bananas and mini chocolate chips. Spoon into cavities of prepared muffin pan and sprinkle tops of muffins with more oats, if desired. Bake 18-20 minutes or until just golden and a skewer inserted comes out clean. Yields 24 mini muffins.
