Gingerbread Cakelets

Ingredients
- 1/ 2 cup White Sugar
- 1/ 2 cup Butter
- 1 Egg
- 1 cup Molasses
- 2 1/ 2 cups All-Purpose Flour
- 1 1/ 2 teaspoons baking soda
- 1/ 2 teaspoon salt
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- 1/ 2 teaspoon ground cloves
- 1 cup hot water
Directions
Preheat oven to 350°F (175°C). Grease and flour pan. In a large bowl, cream together sugar and butter. Beat in egg; stir in molasses; set aside. In small bowl, sift together flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the butter mixture. Stir in the hot water. Divide evenly among wells in pan, filling each well only 3/4 full. Tap gently on counter-top to remove air bubbles. Bake 23-28 minutes until toothpick inserted comes out clean. Cool 10 minutes in pan. Invert onto cooling rack and cool completely. Decorate as desired. If there is extra batter, fill pan with remaining batter and repeat. Makes about 6 cakes.

Good recipe. Leave out the ginger and cloves and switch molasses for honey and you get cake that tastes like graham crackers. Perfect for decorating. Reduce baking soda to 1tsp to improve definition on gingerbread features.

The recipe that comes with the pan does not say to fill the wells only 3/4 of the way full. Don’t over fill the wells in the pan! I think I could have made about 11 or 12 cakelets with this recipe, but the recipe that came with the product says to divide the batter evenly among the wells in the pan. The gingerbread was delicious with buttercream frosting flavored with almond extract.

What a disappointing recipe! How can anything with a cup of molasses and 1 T of cinnamon be this bland? It mixed nicely and came out of the pan well but there have to be more flavorful recipes out there.

I followed this recipe for my gingerbread children Cakelets pan and it turned out phenomenal! I ended up having enough to make four cupcakes too. Spicy and full of holiday spirit!
