- 1 cup flour
- 1/2 tsp baking soda
- 3/4 tsp baking powder
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 egg
- 1 cup eggnog
- 1 Tbsp melted butter
Preheat pan over medium heat and season with butter or oil. In a medium bowl, sift together flour, baking soda, nutmeg, baking powder and salt; set aside. In a separate bowl beat egg until light and fluffy. Add egg, eggnog and butter to dry mixture; mix until blended. Spoon about 2 Tbsp batter into each cavity, and cook until pancakes bubble. Turn each pancake over and continue cooking until pancakes are a light golden brown.
