This simple small-batch Italian Pasta Salad is an easy way to make the most of summer produce! It is cooked, assembled, and served all in one bowl. Cook your favorite bowtie pasta with ease in the microwave with our Microwave Pasta Cooker and top with garden fresh tomatoes, bell peppers, red onions, and a tasty Italian dressing. This recipe is perfect for a quick and healthy lunch option at the office or an easy meal prep weeknight dinner.
Ingredients
Noodles
- 8 ounces bowtie pasta
- 1 Tbsp salt
Toppings
- Baby heirloom tomatoes, quartered
- Diced red onion
- Orange bell pepper
- Chopped parsley
- Parmesan cheese
- ¼ cup Italian dressing (store-bought or homemade)
Directions
Add bowtie noodles or other noodles of choice to Microwave Pasta Cooker. Add water to fill line in bowl and sprinkle with salt. Microwave for 11-13 minutes or until noodles are al dente or fully soft and tender.
With the cover on, carefully flip bowl upside down to drain excess water. Remove the base and rinse the noodles under cold water until cool using the cover as a strainer. Return noodles to base and add veggie and cheese toppings as desired! Mix in dressing of choice and enjoy!
Notes:
- Topping amounts can be customized. Prepare as much as desired!
- For the best flavor, let marinate in the refrigerator overnight.
