Coconut Nordic Express Cake

Ingredients
- 1½ cup flour
- 1 tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup milk
- ¼ cup oil
- 1 cup sugar
- 1 egg
- 1 ½ tsp coconut extract
- Optional decorations: white frosting, pretzel sticks, black licorice, circular sprinkles, ice cream cones for trees, Hot Tamales, M&M’s, gum drop candies, mini chocolate chips, coconut
Directions
Preheat oven to 350 degrees F. Prepare pan with baking spray or butter and flour. Sift together flour, baking soda, baking powder, and salt; set aside. Mix together sugar, oil and egg. Alternately add flour mixture and milk. Blend thoroughly. Stir in coconut extract. Pour evenly into prepared pan and bake for 15-25 minutes or until inserted toothpick comes out clean. Let cake pan cool on rack for 10 minutes before turning out cakes. Decorate as desired!

This cake came out wonderful and fluffy. Made this with the train cake pans and it was so cute, the kids loved it! To be honest we were worried it would be too crumbly to come out of the pan in one whole piece but that wasn’t the case at all. Just make sure to use lots of baking spray!
