- 1/ 2 cup kernels
- 1 cup maple syrup
- 5-6 tablespoons nut butter of choice (peanut, almond, cashew)
- 1 teaspoons vanilla
- 1/ 2 teaspoon salt
- 1-2 teaspoons cinnamon
Preheat oven to 350 degrees.
Add popcorn to the Microwave Popper and pop kernels till finished (or make fresh popcorn using other method). For the sauce, bring maple syrup to a boil over medium heat in a small pan. Watch syrup and boil for 2-3 minutes, making sure syrup doesn’t overflow. Remove from heat and add cinnamon, salt, nut butter, and vanilla to maple syrup. Mix until well blended. Add syrup to popcorn and stir until popcorn is completely coated.
Spread popcorn on a parchment-lined baking sheet and bake for 5 minutes, then rotate and bake for an additional 2-3 minutes. Remove and add additional cinnamon or salt. Let cool completely. Once cooled, break into pieces or leave in clusters and enjoy!
