- 1 cup flour
- 1/ 2 teaspoon salt
- 1/ 2 teaspoon baking soda
- 1 egg
- 1 teaspoon sugar
- 1 cup buttermilk
- 3/ 4 teaspoon baking powder
- 1 tablespoon butter, melted
- chocolate chips, melted
- coconut flakes
- crushed pistachios
Preheat pan over medium heat and season with butter or oil. In a medium bowl, sift together flour, baking soda, sugar, baking powder and salt; set aside. Beat egg until light and fluffy. Add egg, buttermilk and butter to dry mixture; mix until blended. Spoon about 2 Tbsp batter into each cavity, and cook until waffle pancakes bubble. Turn each waffle pancake over and continue cooking until pancakes are a light golden brown.
Melt dark chocolate chips in a small bowl. Place coconut flakes and crushed pistachios in two separate bowls. Once waffles are slightly cooled, dip half of waffle in melted chocolate and roll in either coconut or pistachios.
