- 1 lb. good quality semi-sweet chocolate, chopped (do not use chocolate chips)
- 1/4 cup butter
- 1/2 cup flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 4 large eggs
- 1 1/2 cups sugar
- 1 tsp vanilla extract
- 2 cups semi-sweet chocolate chips
- Optional: sea salt
Preheat oven to 350°F. Melt chopped semi-sweet chocolate and butter in double boiler or in heat safe bowl set over bowling water in a saucepan. Stir until smooth and set aside.
In a small bowl, combine flour, baking powder and salt and set aside. Using a mixer, beat together eggs and sugar until thick and pale yellow. Mix in vanilla and fold in melted chocolate. Slowly add flour mixture and chocolate chips. Scrap sides of bowl, cover with plastic wrap, and freeze for about an hour.
Take 1-2 Tbsp of dough, roll into balls and place on baking sheet. Sprinkle with sea salt (optional) and bake for 10-12 minutes. Let cookies cool on pan for 3-5 minutes before transferring to a cooling rack. Repeat with remaining cookie dough. Cool completely before storing in air-tight container. Makes 2-3 dozen cookies.
