Caramel Stuffed Snickerdoodles

Ingredients
- For cookie topping:
- ¼ cup granulated sugar
- 1 Tbsp ground cinnamon
- For cookies:
- 1½ cup sugar
- 1 cup butter, room temperature
- 2 eggs
- 1 tsp vanilla
- 2 ¾ cup flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- dash of salt
- 5 packages of Rolo, chocolate covered caramels
Directions
Preheat oven to 375 degrees. Combine sugar and cinnamon for cookie topping in a small bowl. Set aside. Cream sugar and butter at medium speed for 3-5 min or until light and fluffy. Beat in eggs one at a time. Add vanilla. In another bowl, sift together flour, cream of tartar, soda and salt. Blend the flour mixture into butter mixture slowly and thoroughly.
With about a tablespoon of dough, roll the ball of dough around a Rolo candy and then roll in sugar cinnamon mixture before placing on cookie sheet. After filling the cookie sheet, bake for 7-8 min. Cool cookies on cooling rack before serving.

Made as directed but found the chocolate rolo melted through the cookie when cooling. Very messy to pick up and eat. Will not try this recipe again. Very disappointed. Wasted the ingredients for sure.
