Caramel Applesauce Cake

Ingredients
- Cake:
- 1/ 2 cup butter, melted
- 1 3/ 4 cups applesauce
- 2 cups flour
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon cinnamon
- 1/ 2 teaspoon baking soda
- 1/ 2 teaspoon baking powder
- 1/ 2 teaspoon salt
- 1 teaspoon vanilla
- 1/ 2 cup raisins
- 2 cups chopped nuts
- Frosting:
- 1/ 4 cup butter, melted
- 1/ 4 teaspoon cinnamon
- 1 1/ 2 cups powdered sugar
- 3/ 4 teaspoon vanilla
- 3-4 tablespoons milk
Directions
Heat oven to 350°F (165°C). Grease and flour pan. In large bowl, combine first 10 ingredients; beat at medium speed 2 minutes, scraping bowl often. Stir in raisins and nuts. Pour batter into prepared pan. Bake for 20-25 minutes, until toothpick inserted comes out clean. Cool 10 minutes in pan. Remove from pan; cool. In small bowl, blend frosting ingredients until smooth. Drizzle over cakes. Makes 6 cakes.

Did not make frosting because I served this with Dreyers slow churned Caramel Delight ice cream instead. There was no caramel in the recipe and I did not know if it was left out by mistake so I bought caramel ice cream.

Delicious cake, made enough for about 9 cakes. Frosting made it difficult to see the intricate detail, next time I will use a glaze.

The cake was delicious. I only gave it 4 stars because it made 9 cakes using this pan. I would have had 2 pans ready had I known.
