Bunny Cakelets

Ingredients
- 1 cup sugar
- 1/ 2 cup butter melted and slightly cooled
- 1 1/ 2 cups flour
- 1/ 2 cup milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1/ 4 teaspoon salt
- 2 eggs
- 2 tablespoons cocoa (optional)
Directions
Preheat oven to 350. Prep pan with shortening and flour or use baking spray. In a large bowl mix sugar and butter at low speed until well blended. Inscrease to medium speed and beat until light and fluffy. Add flour, milk, baking powder, vanilla, salt and eggs.
Pour evenly into prepared pans. Bake for 20-30 minutes or until toothpick inserted in the cake's center comes out clean. Cool cake in pan on rack for 10 minutes. Turn out on rack and cool completely.

I have two pans and I made this recipe to try them out. I was distracted and poured the batter into the pan that I had NOT prepared, so upset, but the bunnies released perfectly.The texture is a dense, open crumb, sort of muffin-like. My college age son ate most of them, and three days later I think the texture and flavor of the remaining bunny has improved. Take care to spread the batter to the sides because otherwise it puffs up in the center and you get a pregnant bunny. I made another batch with cake mix for the softer texture they all wanted. I am glad I used this recipe first because it makes the perfect amount for the pan. There is not reason not to give it five stars, just be aware they are not soft and fluffy.

My 4 year old and I just made these, and they are so simple as a family baking activity and really, really good!! We love the bunny pan and I love that there are recipes posted to go with it to take out the guesswork.

I made this with the coco powder and they were delicious! Everyone loved them and ate them while still warm. Five stars also to the bunny pan too!

Absolutely delicious and moist cake. Has density of a pound cake. This mold worked out perfectly with a little shortening and flour.
