Ingredients
- 4 tortillas
- 1 (12 oz) package precooked pulled pork
- 1 (1 oz) package taco seasoning mix plus water for desired consistency
- 1/2-1 cup shredded lettuce
- 1 ripe avocado, peeled, diced
- 1 cup red cherry tomatoes, cut in half
- 1/4 cup sliced scallions
- Shredded cheddar cheese or cotija cheese
- Toppings: Lime juice, salsa of choice, chopped cilantro, jalapeño slices
- Optional additions: brown rice, beans, cauliflower rice, peppers
Directions
How to make tortilla bowls:
You may use 6″, 8″, 10”, and 12″ tortillas. If the tortillas used are sold at room temperature, they are already soft and don’t require any heating to make them pliable. If using refrigerated tortillas, wrap them in a slightly dampened dish towel and heat them in the microwave for 20-30 seconds, just until they are soft. Don’t overheat them or they will get hard and brittle. DIRECTIONS FOR OVEN: Press tortilla into the Tortilla Bowl Maker. Bake at 375° F for 15 minutes until evenly browned and crispy. Let them cool in the pan for a couple of minutes, move them to a cooling rack. DIRECTIONS FOR GRILL: Place tortilla bowl maker with tortilla on the grill over an indirect medium heat source. Grill until edges are golden brown. Make sure to monitor the tortilla bowls while cooking, as length of cooking time will vary depending on grill type and size of tortilla used.
Place pulled pork in a microwave safe bowl. Stir in seasoning and water. Heat in microwave for 2–3 minutes or until warm. Divide pulled pork into each of 4 prepared tortilla bowls. Add remaining ingredients in layers. Add your desired toppings. Makes 4 servings.
