- 1 1/4 cups flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/8 tsp black pepper
- 2 eggs
- 1 1/4 cup milk
- 3 Tbsp butter, melted
- 1/3 cup grated cheddar cheese
- 1 Tbsp cooked bacon, crumbled (we recommend maple bacon!)
- 2 tsp chopped chives
In a medium mixing bowl, whisk flour, baking powder, baking soda, salt and pepper. In a large measuring cup, whisk eggs, milk and melted butter. Pour into dry ingredients and mix until just combined. Fold in Cheddar cheese, cooked bacon and chives.
Preheat two halves of Belgian waffler on medium heat for 2 minutes. Brush both halves with melted butter or melted coconut oil. Scoop a little over one cup of batter into one half of waffler. Close and cook for about 3 minutes. Flip waffler and cook for an additional 3 minutes until waffle is golden brown. Carefully remove with a spatula. Repeat steps and prep pan in between with butter or coconut oil if needed. Makes 3 full-sized waffles (4 squares each).
