Buckwheat Flapjacks

Ingredients
- 1 cup milk
- 2 tablespoons melted butter
- 1 tablespoon maple syrup
- 1 egg, separated
- 1/ 2 cup buckwheat flour
- 1/ 2 cup all-purpose flour
- 1 tablespoon baking powder
- 1/ 4 teaspoon salt
- Additional butter for greasing the griddle
Directions
Combine milk, melted butter, maple syrup and beaten egg yolk in small bowl. In large bowl combine flours, baking powder and salt. Add milk mixture to flour mixture and stir until combined. Beat egg white until fluffy and stiff peaks begin to form. Gently fold egg white into batter until just combined, careful not to over mix. Over medium heat, heat griddle on grill and melt butter. When butter is melted and grill is hot, spoon batter onto griddle, about ¼ cup of batter per pancake. When pancakes are bubbly on top and browned on the bottom, flip over and finish cooking. Repeat with remaining batter. Makes 16-20 pancakes.
