Spinach, Tomato, and Feta Quiche

This simple and flavorful quiche recipe makes an amazing accompaniment to your brunch table and will make you coming back for more. Combining fresh tomatoes, spinach, parsley, and feta, this quiche recipe is easy to make and vegetarian- friendly!
Ingredients
- Pie crust or puff pastry
- 6 eggs
- 1 cup heavy cream
- 1 1/2 cups grated swiss cheese
- 1 cup spinach
- salt and pepper to taste
- 3/4- 1 cup cherry tomatoes, halved
- 1/4 cup parsley
- 1/4 cup crumbled feta
- Optional: ham or bacon
Directions
Preheat oven to 350°F. Roll out premade pie crust or puff pastry (a crust from scratch works as well). Press gently into tart pan and trim off excess crust. In a large bowl, lightly whisk eggs and cream. Add cheese, spinach, salt and pepper and combine thoroughly. Be sure not to over mix. Pour into tart shell and bake for 15 minutes. Take out of the oven and sprinkle top of quiche with tomatoes, feta and parsley. Return to the oven and bake until edges are set and middle slightly wobbles when shaken (about 10-20 minutes more). Allow to cool for 10 minutes before serving.
