Spicy Maple Roasted Brussels Sprouts and Butternut Squash with Bacon

This sweet and spicy roasted vegetable side dish is the perfect serving for 1-2 people using our Eighth Sheet Pan! Easy and simple combination of butternut squash, Brussels Sprouts, and bacon with a spicy maple glaze gives this side a flavorful twist.
Ingredients
- 1 cup Brussels sprouts, trimmed and halved
- 1 cup butternut squash, cubed
- 1 Tbsp olive oil
- 1 Tbsp maple syrup
- 1/8 tsp cayenne pepper
- Salt and Pepper to taste
- 1-2 slices bacon
- Optional: goat cheese for serving
Directions
Preheat oven to 400°F. In a small bowl, combine Brussels sprouts, butternut squash, olive oil, maple syrup, cayenne pepper, salt, and pepper until fully coated. Spread onto an Eighth Sheet Pan and bake for 15-20 minutes, or until tender.
While veggies are roasting, prepare bacon to package instructions. Once crispy, pat away extra grease and chop into small pieces. When veggies are ready, add bacon and mix to fully incorporate. When ready to serve, add goat cheese (or other crumbled cheese of your choosing) and enjoy as a side. Perfect serving for 1-2 people.
