Spiced Mini Donuts

Ingredients
Donuts:
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 Tbsp cinnamon
- 1/4 tsp ginger
- 1/8 tsp nutmeg
- 1/8 tsp salt
- 1 egg
- 1/2 cup sugar
- 4 Tbsp butter, melted and slightly cooled
- 1 tsp vanilla extract
- 1/3 cup milk
Cinnamon Sugar Topping:
- 3 Tbsp butter, melted and cooled slightly
- 1/4 cup sugar
- 1/2 tsp cinnamon
Directions
Preheat oven to 400°F. Prepare Mini Donut Pan with baking spray containing flour and use a pastry brush to evenly coat the donut cavities. In a small bowl, combine flour, baking powder, spices and salt. Set aside. Using a mixer with a paddle attachment, mix egg and sugar together. Blend in melted butter and vanilla thoroughly. Add half of the flour and stir. Then add the milk followed by the other half of the flour mixture until smooth. For ease, place batter in pastry bag & pipe batter evenly into prepared pan or spoon in using a teaspoon. Bake 12-14 minutes or until toothpick comes out clean when inserted into center of donuts. Cool donuts in pan for about 5 minutes and invert onto a cooling rack.
While donuts cool, melt about 3 Tbsp of butter in a microwave-safe bowl and let it cool slightly. Mix cinnamon and sugar in a separate bowl. When donuts have cooled, dip in melted butter and cinnamon sugar mixture. Add more cinnamon sugar mixture to the top as desired. Makes 12 mini donuts.
