Peach Plum Crisp

This sweet and absolutely delicious peach plum crisp makes the perfect summer treat! The cinnamon brown sugar oat topping combined with an amazing medley of your favorite summer fruits baked to perfection makes this dessert irresistible. Serve warm with vanilla ice cream and enjoy!
Ingredients
- Filling:
- 6 large peaches, sliced and peeled
- 3 large purple or black plums, sliced and peeled (Can omit plums and use 8 peaches)
- 2/3 Cup brown sugar packed
- 5 Tbsp cornstarch (increase if too juicy – decrease if too firm)
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 2 Tbsp lemon juice – optional
- Topping:
- 1/3 Cup flour
- 1/2 Cup brown sugar, packed
- 1/2 Cup rolled oats, quick cook oatmeal
- 1/2 tsp cinnamon
- Dash salt
- 3 Tbsp COLD butter
- Serving: ice cream
Directions

Instructions:
Preheat oven to 425°F. Grease 9” Round pan with Baking Spray or Solid Shortening and dust with flour. Slice and peel peaches and plums –set aside.
FILLING
In a large bowl, mix together brown sugar, cornstarch, and salt. Add sliced peaches & plums and stir until evenly coated. Add vanilla extract, lemon juice and stir until evenly coated. Let stand while assembling topping.
TOPPING
In medium bowl, mix together flour, brown sugar, oats, cinnamon, and salt. Cut in the cold butter until clumps are pea sized.
Stir fruit and filling before placing fruit evenly in baking pan. Cover with topping, in mounds with some fruit showing through. Bake until topping is browning and crisp, about 30 -40 minutes. Cool for at least 30 minutes. Serve warm with ice cream.

Is it possible to use all plums in this crisp?

Hi! Yes, you could use all plums instead of peaches. It would probably take about 10-12 plums.
