Mini Waffle Pancakes

Ingredients
- 1 cup flour
- 1/ 2 teaspoon salt
- 1/ 2 teaspoon baking soda
- 1 egg
- 1 teaspoon sugar
- 1 cup buttermilk
- 3/ 4 teaspoon baking powder
- 1 tablespoon butter, melted

Directions
Preheat pan over medium heat and season with butter or oil. In a medium bowl, sift together flour, baking soda, sugar, baking powder and salt; set aside. Beat egg until light and fluffy. Add egg, buttermilk and butter to dry mixture; mix until blended. Spoon about 2 Tbsp batter into each cavity, and cook until waffle pancakes bubble. Turn each waffle pancake over and continue cooking until pancakes are a light golden brown. Top with maple syrup or your favorite toppings.
*Optional topping variations:
. Kiwi, pomegranate seeds, and honey
. Apple slices, granola, cinnamon, and maple syrup
. Almond butter, banana slices, blueberries, and seeds
. Strawberries, chocolate sauce, and whipped cream
