Mini Bundt Bites

These simple yet flavorful Mini Bundt Bites make the perfect miniature dessert to add to your kid’s lunches or share as a fun party snack. Create a simple glaze or dip them in dark chocolate for a delicious treat.
Ingredients
- ½ cup flour
- ½ tsp salt
- 1/4 tsp baking soda
- ¼ tsp baking powder
- 2 Tbsp butter
- 1/3 cup sugar
- 1 Tbsp honey
- 1 egg
- ½ tsp vanilla extract
- 1/3 cup water
Directions
Preheat oven to 375 degrees. Prepare pan with baking spray. In small saucepan, heat water and sugar until sugar dissolves. Add butter and stir until melted. Set aside to cool. In small bowl, mix together flour, baking soda, baking powder and salt. Add egg, honey and vanilla to sugar mixture, before adding flour mixture. Blend until smooth. Pour half the batter into the prepared pan. Bake for 6-8 minutes or until toothpick inserted into center of hole comes out clean. Remove from oven and turn pan over immediately to remove mini cakes. Clean pan thoroughly, prep with shortening again and repeat. Top mini Bundts with cinnamon sugar or a light glaze.

Closer to a squishy doughnut in texture, than a sponge cake. Absolutely delicious and easy to ring the changes with different honeys. I made 12 one third cup size bundts with this mixture, which made for ample honey surface area, didn’t need any further toppings. It’s hard not to make a second batch immediately:)
