Lemon Trio Cakes

Ingredients
- 1 1/ 2 cups flour
- 1/ 2 teaspoon baking powder
- 1/ 2 teaspoon salt
- 3/ 4 cup butter, melted
- 1 cup sugar
- 3 eggs
- 1/ 2 tablespoon lemon extract
Directions
Preheat oven to 350 degrees. Oil or spray pan. In a medium bowl, combine flour, baking powder and salt. In another bowl, combine butter and sugar. Add eggs one at a time, mixing thoroughly. Add lemon extract. Slowly add flour mixture and stir until blended. Pour evenly into wells of pan. Tamp gently on countertop to remove air bubbles. Bake for 25-35 minutes or until toothpick inserted in center comes out clean. Let stand on cooling rack for 10 minutes before unmolding.

The recipe works well. My only issue is I would use fresh lemon zest and juice in place of extract which has an artificial flavour. Otherwise, it works as written. A light and fresh cake recipe.
