Grilled Avocado Caprese Panini

This Grilled Avocado Caprese Panini is packed with the flavor of fresh tomatoes, basil, avocado, fresh mozzarella, and a drizzle of balsamic glaze. Cheesy deliciousness! Easy to make on your stovetop at home in minutes. (vegetarian)
Ingredients
- 4 slices whole wheat bread (or bread of choice)
- Butter for bread
- 1 ripe avocado
- 1-2 tomatoes, sliced
- 4-6 slices fresh Mozzarella
- Fresh basil leaves
- Balsamic Glaze or reduction*
Directions
*Store bought balsamic glaze is great to use or make your own reduction! For making reduction, place 1 cup of balsamic vinegar in a saucepan and heat until boiling over medium/high heat. Reduce heat to medium/low and simmer until reduced by half and thickened. Make sure it is not boiling rapidly. Cool and store in an airtight container in the fridge.
Spread butter on the outside of 2 slices of bread. Mash and spread avocado on the inside of bread slices. Layer sliced tomatoes, mozzarella, and basil leaves. Drizzle glaze/reduction over the top and place other slice of bread on top.
Preheat Sandwich & Grill Press over medium heat according to instructions. Place sandwich on one half and close press. Cook for 2-3 minutes on one side. Flip press and cook for additional 2-3 minutes on the other side or until mozzarella is starting to melt and bread is browned. Depending on how thick the mozzarella slices are, additional cooking time may be needed. Repeat with other assembled sandwich.

I bought this pan so I could make this sandwich. It was delicious and perfectly cooked with beautiful grill marks and crispy bread. I’ll be using this pan frequently and making this recipe again soon.
