Egg Breakfast Sandwich with Avocado and Tomato

Easy and quick breakfast sandwich recipe you can make in your microwave and take with you on-the-go! Simply crack an egg in our Egg N’ Muffin Pan, microwave for a minute, and build you sandwich with our homemade avocado cilantro spread on a bagel or English muffin.
Ingredients
- For Cilantro Avocado Spread:
- 1 large avocado, skinned and pitted
- 1 cup cilantro
- 1/4 cup olive oil
- 1 Tbsp apple cider vinegar
- 2 limes, juiced
- 2 cloves garlic
- salt & pepper, to taste
- For Breakfast Sandwich:
- Egg(s)
- Bagel(s), halved & toasted
- Sliced tomatoes
- salt & pepper to taste
Directions
For the spread, combine all ingredients in a food processor until creamy.
Using a Nordic Ware Egg N’ Muffin pan, scramble one egg in pan and add salt and pepper. Close the top and microwave for one minute until cooked. While egg is cooking, toast bagel until warm and crispy. On bottom bagel half, add egg patty and sliced tomatoes. Spread Cilantro Avocado Spread on the top bagel half. Place on top of sandwich and breakfast is ready to go! Repeat with Egg N’ Muffin Pan if making more than one sandwich.

So easy and cheaper than buying at fast food places and taste much better. You can add most anything to this.. i also use just egg whites at times to cut back on yolks. add bacon bits.

I dont have an Egg n Muffin pan, but it looks absolutely delicious. If I had one I would use it every day!!
