Cocoa Tractor Cake

Ingredients
- 2 1/4 cups flour
- 1 1/4 tsp baking soda
- 1/4 tsp baking powder
- 3/4 tsp salt
- 3/4 cup cocoa
- 1 3/4 cups sugar
- 3/4 cup shortening
- 2 eggs
- 1 tsp vanilla
- 1/2 tsp almond extract
- 1 1/2 cups water
Directions
Heat oven to 350° F. Prepare Tractor Cake Pan with baking spray containing flour and use a pastry brush to evenly coat the details of the pan. In a large bowl, combine flour, baking soda, baking powder, salt, and cocoa; set aside. Using a mixer with a paddle attachment, mix sugar and shortening. Add eggs, vanilla, and almond extract. Slowly add flour mixture, alternating with water and mix thoroughly. Pour batter into prepared pan, filling ¾ full. Gently tap pan on towel-covered countertop to remove air bubbles and settle the batter into details of pan. Bake for 40-50 minutes until toothpick inserted comes out clean. Cool cake in pan for 10-15 minutes before carefully inverting onto a cooling rack. Cool completely and decorate as desired.
