Beehive Cornbread Cakes

Ingredients
- 1 cup cornmeal
- 1 cup flour
- 1 tablespoon baking powder
- 2/ 3 cup sugar
- 1 teaspoon salt
- 1 1/ 4 cup milk
- 3 eggs
- 4 tablespoons melted butter
- 1/ 4 cup honey
Directions
Preheat the oven to 375 degrees. Prepare beehive pan with baking spray. In a medium bowl, mix ingredients together. Pour batter equally into prepared pan, reserving half of the batter for the second batch. Bake 14-18 minutes or until toothpick stuck into center comes out clean. Turn out cakes and repeat baking with second batch.

These cakelets are delicious: light and fluffy, and filled with corn and honey flavors. Baking them into beehives and glazing each beehive with warm honey makes them extra-cute!!

These are fun! I like to pre-bake and take these when camping. I’ll put one in a bowl then ladle in chili or stew around it. These are like a sweet cornbread and just big enough to be filling with the chili or stew. Also really yummy when still warm from the oven with a pat of butter and drizzle of honey.
