Beef Gyro Pita Sandwiches

Ingredients
- Yogurt Sauce:
- 7 oz. Greek yogurt
- 1 garlic clove, crushed
- 1 tsp lemon juice
- 1/4 tsp ground pepper
- 1/4 tsp iodized sea salt
- Gyro Meat:
- 2 pounds of ground beef (85/15)
- 1/2 medium yellow onion, diced
- 4 cloves garlic, peeled
- 1 Tbsp dried oregano
- 1 Tbsp ground cumin
- 1/2 tsp ground pepper
- 1 tsp Kosher salt
- 1 teaspoon canola oil
- Sandwich:
- 4 pita breads (or any flat bread)
- 1 Persian cucumber, sliced
- 1 Roma tomato, sliced
- 1/2 medium yellow onion, sliced
- Feta cheese
Directions
Yogurt Sauce:
In a bowl, combine all the ingredients and whisk until everything is well combined.
Gyro Meat:
Preheat the oven to a 350°F (176.6°C). In a blender, add of the ingredients for the gyro meat and blend until all combined. Transfer the mixture into a loaf pan and bake for 1 hour. Let it cool completely before cutting into thin slices. Using a 13” Square Meal Pan or any nonstick pan, sauté the meat slices and sliced onions with oil for 3 to 4 minutes.
Gyro Sandwiches
Heat pita breads in a pan or in the microwave. Spread each pita bread with a thin layer of yogurt sauce, followed by slices of gyro meat and sautéed onion. Top it with sliced tomatoes, cucumber, feta cheese and finish with additional yogurt sauce. Makes 4 sandwiches.
*Store leftovers in the refrigerator and pack for a quick lunch or meal during the week.
