Banana Brilliance Cakelets

Ingredients
- 1 1/4 cups flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/4 cup yogurt
- 1 cup mashed, very ripe bananas
- 1/4 cup butter, melted
- 1/3 cup sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 Tbsp vanilla extract
Directions
Preheat oven to 350°F. Prepare Brilliance Bundtlette Pan with baking spray containing flour and evenly coat the details of the pan with a pastry brush. In a medium bowl, whisk together flour, baking soda, cinnamon and salt. In another bowl, combine yogurt and mashed banana. Set aside bowls.
Using a stand mixer with paddle attachment, cream butter and sugars together. Add egg and vanilla and blend thoroughly. Add half of flour mixture, then half of banana mixture. Blend completely before adding the other half of flour and banana mixture. Scrape sides of bowl and mix until fully incorporated. Pour evenly in prepared pan, filling each well only ¾ full. Gently tap pan on counter to remove air bubbles. Bake for 15-20 minutes or until toothpick inserted comes out clean. Cool cakes in pan for 8 minutes before inverting onto a cooling rack.

Absolutely delicious! Ours baked for about 18 min and came out beautifully browned on the outside. They were incredibly moist on the inside as well! It’s taking all of my self control not to eat all 6 in one go. They go great with a drizzle of molasses over the top! We’ll definitely be making these again~
