Baked Apples with Brie

Ingredients
- Crumble topping:
- 1/2 cup flour
- 1/4 cup oats
- 1/2 cup brown sugar
- 1/2 tsp salt
- 1/4 cup butter, cold
- Baked Apples:
- 8 medium apples (use a good baking variety)
- 1/4 cup butter
- 2 Tbsp maple syrup, plus more for serving
- 1/2 tsp cinnamon
- Pinch of nutmeg
- 1 3-4 oz wedge Brie cheese, cut into small slices
Directions
Preheat oven to 400° F. For crumble topping, cut cold butter into small pieces. Combine cut butter with flour, oats, brown sugar and salt until thoroughly combined and crumbly (recommend mixing with hands).
To prepare the apples, peel and chop 4 of the 8 apples. In a small skillet, sauté chopped apples with butter, maple syrup, cinnamon and nutmeg until tender, 4-6 minutes. Take the remaining whole 4 apples and cut off the tops and scoop out the inside core, leaving the walls and bottoms intact. Place hollowed apples in an 8×8 or 9×9 baking pan. Evenly distribute the cooked apple mixture into each apple. Sprinkle the crumble mixture on top of each apple and cover with aluminum foil. Bake for 20 minutes. Uncover the apples and place a slice of brie on top. Put back in the oven and bake for another 15-20 minutes, uncovered. Remove from oven and cool 4-5 minutes before serving. Drizzle apples with more maple syrup if desired and serve warm.
