Almond Butter Granola Leaf Bites

Homemade almond butter granola bites make a healthy, quick, and energizing snack! Easy recipe to make a ahead and pack for the week, made in our Leaflettes Cakelet Pan (gluten-free, vegan).
Ingredients
- 1/2 cup almond butter
- 3 Tbsp maple syrup
- 1/4 cup brown sugar
- 1/3 cup canola oil
- 1 tsp vanilla
- 1 tsp salt
- 2 Tbsp flax
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 3/4 cup flaked coconut
- 1 1/2 cups oats (gf: sub gluten free oats)
- 1/2 cup pepitas
- 1/3 cup slivered almonds
- 1/2 tsp almond extract
Directions
Preheat oven to 350°F. Prepare Leaflette Pan with baking spray. Combine all ingredients in food processor with blade attachment in the bottom. Pulse several times to get desired consistency. Take half of the mixture and fill each cavity with equal amounts and press down to compact granola bites. Bake for 12-18 minutes or until just starting to brown on edges. Invert bites onto a cooling rack and repeat with second half of mixture. Store in airtight container for up to a week. Makes 24 bites.

Made this today in my new leaflet pan. Beautiful can’t wait to make maple shortbread cookies because the decoration is exquisite. I did have problems with the granola bites staying together. They crumbled with just the pressure of fingers picking them up. I’m thinking of adding an egg white as a binder as the taste is delicious. What do you think for a binder?

These are bound to be delicious! Can you provide the nutritional information for these please? I’m cutting way back on added sugars, so plan to make this recipe with 6 Tbsp (3/8 cup) maple syrup and no brown sugar. It’ll be wetter, so I will bump the oats to 1-2/3 cup. Also, I don’t have a large food processor so will just use my spice grinder (aka repurposed coffee grinder) for small batches of the oats, nuts, and seeds, to mix into the wet ingredients and spices in a big bowl. I’ll report results!

Very yummy!! Make sure your food processor is big enough before you start! I left out both extracts and it was still delicious!!!!

This is a must have for the holidays! Moist and delicious. Very rich in flavor. A gourmet granola you will have over and over. I made it for my family, they loved it, and were very upset when there was not more. I bought the leaflettes cake pan and was so glad I did! I love it. This recipe is excellent! I did change it a little bit, but not much. I substituted a little bit of butter for the canola oil (about 1/6 cup) and added a bit more sweetener. Also, to get it to blend in my food processor, I had to add about 1/4 to 1/3 cup of water.
