Chocolate Chip Cookie Bars

The ultimate chocolate chip cookie bars baked in a mini sheet pan! These classic chewy, chocolatey cookie bars will be your new favorite go-to dessert. Super easy to make in our Eighth Sheet pan and will disappear quickly! Cut into squares and enjoy or add scoops of ice cream and chocolate sauce on top for an indulgent treat.
Ingredients
- 1 large egg
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/3 cup unsalted butter, melted and cooled slightly
- 1 tsp vanilla
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3/4 cup semi-sweet chocolate chips, divided
- Optional topping: ice cream, chocolate sauce, whipped cream, etc.
Directions
Preheat oven to 350°F. Prepare an Eighth Sheet Pan with baking spray and brush with a pastry brush to distribute spray evenly across the pan and up the sides.
In a medium bowl, beat the egg and add the brown sugar, granulated sugar, melted butter and vanilla. In a small bowl, whisk the flour, baking powder, baking soda and salt. Add the dry mixture to the egg mixture. Fold in 1/2 cup chocolate chips. Spread the batter evenly into prepared pan. Sprinkle the top with remaining chocolate chips. Bake 16- 18 minutes or until lightly browned. Cool slightly while in pan. Add desired toppings. Cut into squares (a plastic spatula with a straight edge works great. We do not recommend cutting with knife in the pan). These can easily be cut into squares and freeze for later! 1 batch fills 1 Eighth Sheet Pan.
