Orange Heart Cakelets

Ingredients
- 1/ 2 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1/ 2 teaspoon baking powder
- 1/ 2 teaspoon salt
- 1/ 2 cup orange juice
- 1/ 4 cup vanilla yogurt
Directions
Preheat oven to 325°F. Grease and flour pan; set aside. In a large bowl, beat butter and sugar until light and fluffy. Add eggs and mix until blended. Add remaining ingredients; blend on low speed, scraping bowl often until combined. Beat on medium speed 2 minutes. Spoon half of batter into prepared,
filling wells ¾ full. Bake 22-28 minutes, until toothpick inserted comes out clean. Cool 10 minutes in pan. Invert cakelets onto cooling rack and cool completely. Wash pan and repeat with remaining batter. While cakelets are cooling, prepare icing.
Icing:
6 cups powdered sugar
½ cup water
2 Tbsp light corn syrup
½ tsp orange extract
Food coloring
Icing – In a medium saucepan, combine powdered sugar, water and corn syrup. Heat over low heat, stirring constantly, until sugar is dissolved. Do not let icing temperature exceed 100°F. Remove from heat; stir in extract and coloring as desired. Place cakelets on cooling rack over cookie sheet. Spoon warm icing over cakelets, covering completely. Let set and decorate as desired. Makes 12 cakelets.
