Cherry Cardamom Loaves

Ingredients
- 2 1/ 4 cups flour
- 3/ 4 cup sugar
- 1 1/ 2 teaspoons baking powder
- 1/ 2 teaspoon baking soda
- 1/ 2 teaspoon salt
- 1/ 2 teaspoon ground cardamom
- 2 eggs
- 1/2 cup butter, melted
- 1/4 cup orange juice
- 3/4 cup milk
- 1/3 cup dried cherries, coarsely chopped
- 1/4 cup chopped blanched almonds
Directions
Heat oven to 350 degrees F. Grease and flour pan; set aside. In medium bowl, combine flour, sugar, baking powder, baking soda, salt and cardamom; mix well. In small bowl, combine eggs, butter, orange juice and milk. Add egg mixture to flour mixture and stir just until dry ingredients are moistened. Stir in cherries and nuts. Pour batter into prepared pans. Bake at 350 F for 25-30 minutes, until toothpick inserted comes out clean. Remove from oven and cool 10 minutes in pan. Remove from pan and cool completely. Makes 8 loaves.

I used this recipe for a single loaf and it was beautiful! Only giving 4 stars because I like a sweeter loaf, however, it will pair well with some sort of icing or powdered sugar. The design in the loaf pan was very clear, and the edges were not overcooked or dry! In the future, I will make this using more sugar and a bit more cardamom for extra flavor. Thanks!
