Ingredients
Salmon:
- 1 pound salmon + salt and pepper (one thick filet is fine, just cut it into individual pieces)
- 1 lemon, sliced
Sauce:
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 2 tablespoons mayo
- 2 cloves minced garlic
- squeeze of lemon juice
- cayenne to taste, salt to taste
- parsley for topping
Potatoes:
- 2 lbs. baby potatoes cut in half
- Salt, pepper, olive oil
Directions
- Get a sheet pan going with the potatoes at 400°F. Roast potatoes for 45 minutes or until golden.
- Whisk up the sauce.
- Sear the salmon, starting skin side up, to get a golden exterior on each piece. Don’t cook it all the way through yet.
- Tuck lemon slices into the pan.
- Top with a spoonful of sauce, transfer to the oven for 5 minutes (at 400°F) until a bit caramelized on top.
- Finish with parsley and extra sauce.
